Embrace the flavors of a vegetarian feast with a dish that combines the coolness of cucumber yogurt curry with the fiery kick of a spicy gooseberry pickle. This refreshing meal is served alongside plain rice, offering a harmonious balance between the creamy, cooling curry and the intense heat of the pickle, making it a perfect choice for dining in warmer climates.

The hot gooseberry pickle is a quick and simple recipe. To start, ensure that your gooseberries, weighing 250g, are thoroughly washed and dried. In a saucepan, blend 250ml each of apple cider vinegar and water with a tablespoon of caster sugar and a teaspoon of salt. Bring this mixture to a simmer, allowing the sugar and salt to dissolve completely. After adding the gooseberries, turn off the heat and let them sit in the liquid for about ten minutes. Meanwhile, dry-roast a teaspoon of fenugreek seeds until they release a fragrant aroma, then cool and grind them with a tablespoon of mustard seeds and four crushed garlic cloves to create a coarse spice paste. Drain the gooseberries and mix them with the spice paste, three tablespoons of vegetable oil, and four tablespoons of Kashmiri chilli powder, adjusting the salt to taste. Refrigerate for a minimum of two hours before serving.

To prepare the accompanying cucumber yogurt curry, begin by peeling two cucumbers and reserving the skins. Gently crush the whole cucumbers with a rolling pin before slicing them into diagonal pieces about one centimeter thick. In a blender, combine a small portion of the cucumber, its seeds, and the reserved skins with 80g of drained coconut, two roughly chopped green chillies, four roughly chopped garlic cloves, 30g of fresh coriander, half a teaspoon of black peppercorns, and two teaspoons of sesame seeds. Blend until smooth, then whisk 100g of natural yogurt until creamy, adding water if needed to achieve a pourable consistency. Season with salt and incorporate the cucumber-coconut paste and sliced cucumber. Chill the mixture until serving time.

For the final touch, prepare a tempering just before serving the curry. Heat four teaspoons of vegetable or coconut oil in a small frying pan over high heat. Add ten fresh curry leaves and cook until they sizzle, approximately thirty seconds. If desired, include a teaspoon of fenugreek seeds, then add two teaspoons each of mustard and cumin seeds, along with three dried red chillies. Cook briefly, taking caution as the spices may splutter. Pour the spiced oil over the chilled cucumber yogurt curry just before serving.

This delightful vegetarian meal, featuring the contrasting tastes of the cooling curry and spicy pickle, is best enjoyed with a serving of plain boiled rice. The vibrant combination of flavors and textures makes it an ideal choice for those seeking a refreshing yet bold culinary experience.
